Easy to make, low in carbohydrates and calories, these zucchini fritters are a wonderful way to get some veggies in your day. The ingredient list is simple but they will yield a delicious result. It’s a perfect appetizer or side dish with a side of Greek yogurt or ranch dressing. It may take a few tries before getting the proper crispy texture – the key is to remove as much water as possible from the zucchini after grating. Using the cheesecloth is the best and most effective method.

RECIPE: Cooking at Home
Easy Peasy Zucchini Fritters
Step 1
Toss zucchini and salt together in a large colander and place in sink to drain for 10 minutes.
Step 2
Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
Step 3
Mix flour, Parmesan cheese, egg, garlic, kosher salt, and pepper together in a large bowl. Stir in zucchini.
Step 4
Heat olive oil in a large skillet over medium-high heat.
Step 5
Scoop batter by the tablespoon into the hot skillet and fry until golden brown, about 2 minutes per side.
